Easy Crockpot Salsa Chicken Tacos (3 Ingredients!)

Here’s an easy dinner idea that basically makes itself.

These crockpot salsa chicken tacos are one of those go-to meals you can throw together in a few minutes and come back to later.

The chicken cooks low and slow in salsa and seasoning, so it turns out tender and easy to shred.

Once it’s ready, just scoop it into tortillas and add whatever you like on top. We keep it simple here with shredded cheese, tomatoes, and a little sour cream, but you can easily switch it up depending on what you have.

This is a good one to keep in mind for those days when you’re busy around the house and don’t want to think about dinner later. It’s ready when you are. No extra work needed.

How to Make Easy Crockpot Salsa Chicken Tacos

Ingredients you’ll need

  • 2 lbs boneless, skinless chicken breasts
  • 16 oz jar chunky salsa
  • ½ packet taco seasoning
  • Flour tortillas
  • Your favorite toppings

1. Add the chicken to the crockpot

Place the chicken breasts in a single layer at the bottom of the crockpot.

2. Season and add the salsa

Sprinkle the taco seasoning evenly over the chicken, then pour the salsa on top, making sure everything is coated.

3. Cook until tender

Cover and cook on low for about 4 hours, or until the chicken is fully cooked and easy to shred.

4. Shred the chicken

Remove the chicken and use two forks to shred it. It should pull apart easily.

5. Return to the crockpot

Add the shredded chicken back into the crockpot and stir it into the sauce so it stays juicy.

6. Assemble the tacos

Spoon the chicken into tortillas and add your favorite toppings like cheese, tomatoes, cilantro, or sour cream.

What to Serve With This

You can absolutely serve these on their own, but if you need to stretch them a little further, there are a few easy sides that help.

Rice is an easy add-on. You can serve it on the side or have everyone add a little to their tacos. (This is what we do!)

A simple side like black beans or refried beans also works well. They’re quick, inexpensive, and pair well with the flavors here.

If you want something fresh to go with it, we also love sliced cucumbers on the side.
